It's Halloween and we hope you have lovely weekend full of spooky fun. If you're planning a celebration or a Halloween party why not try our delicious recipe for pumpkin stew. Then pat yourself on the back for making a sustainable meat-free choice.

Pumpkin Stew

Quick and simple to make, add a warming, wholesome seasonal stew to your Halloween celebrations.

Ingredients

1 medium pumpkin

1 medium onion

1 stick of celery

3-4 cloves of garlic

1 litre of vegetable stock

1 cup of cooked butter beans

Vegetable, sunflower or olive oil

Method

  1. Slice the top off the pumpkin and carefully scoop out the inside - keep the outside and the top!
  2. Cut the pumpkin into cubes and get rid of the stringy bits and the seeds.
  3. Put the pumpkin pieces on a baking tray, drizzle with some oil and roast with the garlic cloves in the oven (gas mark 6/200C) for about 30 minutes.
  4. In a large-ish saucepan, fry the chopped onion and celery in some oil until soft. Add the roasted pumpkin and garlic, stock and butterbeans and simmer for 20 minutes.
  5. When it has thickened a bit, pour the stew into the pumpkin shell, ready to be served. It's particularly good with crispy jacket potatoes. Yum!
